Oh, and these rustic honeyed chicken hand pies inspired by the honeyed chicken recipe from A Feast of Ice and Fire cookbook and this post over at The Inn at the Crossroads.

Game of Thrones: Pigeon Pie Recipe
I’m being absolutely honest when I say this has to be my favorite savory pie I’ve had so far. I’ve tried a few recipes online for pigeon pie and the recipe from Bon Appetit was my favorite. I love the savory and sweet aspect of it and the recipe I have today is a variation of it. Even though there are quite a few ingredients, this pie is really easy to put together. Most of the time and effort goes into the outside appearance of the pie but it’s so worth the time and looks incredibly impressive if you’re hosting a party. Honestly, if I can make this pie look half decent, I doubt you will have any trouble. You have to give it a try!
Tonight is finally the Emmys and I think it’s safe to say that Game of Thrones is going to sweep the competition. They already won a few awards during the Creative Arts Emmys a few days ago! The category I’m very curious to see who will win is Best Supporting Actress. I personally find it impossible to chose between Maisie Williams, Emilia Clarke, or Lena Headey.

- 2 tbsp - unsalted butter
- 1 tbsp - vegetable oil
- 1 - medium onion, thinly sliced
- 1 tsp - sugar
- ¼ cup - red wine
- _______
- 2 tbsp - vegetable oil
- 1 - medium carrot, peeled, small diced
- 1 - small onion, small diced
- 1 - medium stalk of celery, small diced
- 1 - bay leaf
- ½ tsp - cinnamon
- ¼ tsp - ground cloves
- 14oz - ground pork
- salt and pepper to taste
- ________
- 14oz - quail meat, bones removed (you can substitute chicken)
- ½ cup / 3oz - dried apricots, small diced
- ⅓ cup - pine nuts, lightly toasted
- 12 slices - pancetta
- ________
- HOT WATER CRUST
- ________
- 20oz - all purpose flour
- 1½ sticks / 6oz- unsalted butter
- 7.5oz - water
- 1 - egg, lightly beaten (egg wash)
- Heat a saucepan over medium heat with butter and oil. Once hot, add the onions and cook for 5 minutes. Add the sugar and mix to combine. When the onions get soft, add the wine and cook over medium low heat until most of the liquid has cooked off and the onions are really nice and soft. Season for salt and pepper, set aside.
- Heat a clean saucepan over medium heat. Add the vegetable oil and once hot, add the onions and bay leaf and cook for 3 minutes until softened. Add the diced carrots, and celery and cook for another 3 minutes. Add the ground pork, cinnamon, and cloves. Break the pork into small pieces and cook just enough for the pork to cook through. Season with salt and pepper. Set aside to cool.
- Preheat the oven to 375F. Have an 8' spring form pan ready for the crust.
- For the crust, heat the water and butter together just until it comes to a boil. Pour the water and butter mixture into the flour and mix just until it forms a ball of dough. Take ⅓ of the dough and place it on a lightly floured surface. Leave the rest of the dough in a warm place, covered.
- Roll the dough out into a circle. It needs to be big enough to fit the bottom and sides of the pan. Transfer the rolled out dough to the pan and gently press it into the corners of the pan.
- To start filling the pie, start with three slices pancetta followed by half of the pork, half of the onions, half of the apricots, half of the pine nuts, and then another 3 slices of pancetta.
- Lightly season the quail or chicken with salt and pepper and fill the pie with the meat. Top another 3 slices of pancetta and the rest of the onions, apricots, and pine nuts. Pour in the last of the pork and finish with 3 more slices of pancetta on top. Set aside.
- Take half of the remaining dough and roll it out to fit the top of the pie. Press the dough together to seal the seams. At this point, you can decorate the top of the pie with leaves, a crown, and a pigeon in the middle. Stick the add ons with a little bit of the egg wash. Cut 2-4 slices in the center (inside the crown) to allow ventilation. Egg wash the crust.
- Bake for one hour. At this point, the crust should be lightly golden brown but if you notice your bird or edges are getting dark too quickly, cover it with foil. If you want to add any additional leaves to the side of the pie, I took the pie out when the top was lightly golden brown. Take off the ring of the springform pan and add any additional leaves. Pan for another 30-40 minutes until the internal temperature reaches 160F. Let it cool before slicing and eating.

Boy was I wrong.
Now it’s a full fledged addiction. Sundays are my new favorite day of the week. 9’o clock on Sundays are my happy place. Season six is giving me pure joy. After a full year of waiting, the premier is like being reunited with your long lost lover. Hopeful fans pray for Jon Snow’s resurrection. Utter despise for Ramsay is growing with every minute of his screen time.
But I don’t want to spoil anything, so I’ll keep quiet about the show. It’s time to talk about the food.
To get pumped for the season 6 premier, I decided to cook up a feast. My sister got a cookbook called The Feast of Ice and Fire, which holds recipes from the North, the South, the Wall, Dorne, and across the Narrow Sea. Basically this book is the key to good food. Since most of the recipes are meat heavy, I used a different recipe for the stew that I found in a vegetarian cookbook. The bread, onions, and ham come from The Feast of Ice and Fire.
I served the stew in homemade bread bowls. The bread bowls were crusty and filled to the brim with hot, hearty stew. The pearl onions were dripping with a sweet brown gravy. The ham… I don’t know. I’m vegetarian. But the way my sister was gushing over it made it clear that it will please each and every ham-eating omnivore out there. The salad sorta just sat there. Who needs salad when there are bread bowls? I’m fairly certain bread is healthier than leafy greens. My taste buds told me so.
Alright everyone, here comes a wave of recipes. Don’t be afraid to eat a ton. You need it. It’s cold in the North.
Winter is Coming.
For the bread:
Ingredients:
- 1 and 1/2 tablespoons dry yeast
- 1-2 tablespoons honey or maple syrup
- 3 cups warm water
- 6 and 1/2 cups all purpose flour
- 1 tablespoon coarse salt
- cornmeal (for dusting the pan)
Directions:
- Add the yeast and honey to the warm water and stir. Let sit for about five minutes before adding the flour and salt.
- Put the dough on a well-floured surface and knead it for about five minutes. If you poke the dough and it bounces back, it’s ready to go. If it’s too sticky, add a bit more flour.
- Place the dough in a large greased bowl, cover it with a towel, and let it rise in a warm area for about two hours. Once the dough has doubled in size, divide it into thirds. If you want to make bread bowls, divide the dough further. Put the dough balls on a pan sprinkled with cornmeal and let them rise for an additional 40 minutes.
- Preheat the oven to about 450 degrees F. Fill a baking dish with two cups water and place it underneath the rack where the bread will bake. This will help create a crusty crust. Bake the loaves for about 30 minutes, or until the crust is dark golden brown. The loaves should should hollow when you tap them.
For the onions:
Ingredients:
- 10 ounces pearl onions, peeled
- 1 tablespoon honey
- 1 tablespoon butter
- 1 teaspoon finely chopped rosemary or thyme (or any herb you desire)
- 1/3 cup apple cider or apple juice
- 1 tablespoon flour
- 3 cups veggie broth
Directions:
- Cut seven of the onions into quarters. Put the honey, butter, herbs, and onions into a deep frying pan and cook at medium heat. Cook for about 8 minutes, or until the onions turn golden brown, stirring to keep them from burning.
- Add the cider to the pan in 3 splashes. Let it heat between each splash. This helps the gravy taste sweet.
- Sprinkle the flour into the pan and stir well. Then add the veggie broth, and let simmer until it has reached your desired consistency. I usually add 1-2 more tablespoons of flour. Serve hot.
For the Stew:
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 potato, chopped
- 2 ripe tomatoes, chopped
- 5 cups vegetable broth, chopped (heh)
- teaspoon of thyme, sage, or rosemary
- 2 lbs white beans, about 4 cups, drained and rinsed
- 8 oz orecchiette or other pasta shapes, about 2 cups
- pinch of hot red pepper flakes
- salt and black pepper
Directions:
- Heat the oil in a large saucepan, the add the onion, garlic, and potato and cook until golden, 3-4 minutes. Add the tomatoes and cook for 2-3 minutes.
- Add the remaining ingredients and bring to a boil, then simmer for 10-15 minutes.
- Ladle stew into bowls (preferably made out of bread.)
For the ham:

- 1 spiral cut ham (we used a small cut of ham rather than an entire ham and it worked fine)
- 1/2 cup honey
- 1/2 cup red wine vinegar
- 1/2 cup apple cider

Directions:
- In a saucepan, stir together the honey, vinegar, and cider. Stew over medium heat for about ten minutes, then pour over them ham. Cook the ham according to package directions, and periodically baste the ham with the juices. Serve on a fancy platter.
Wow. Feast away. I can’t take credit for all these recipes, even though I did make modifications. I omitted ingredients we didn’t have on hand and made the ingredients vegetarian.
